- 3 lb chuck roast
- 2 tbsp olive oil
- 1 packet (1 oz) onion soup mix
- 2 cups beef broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 tbsp Worcestershire sauce
- 1/2 tsp black pepper
- 8 slices white or sandwich bread
- Mashed potatoes, for serving
- Optional: fresh parsley for garnish

- Heat olive oil in a skillet over medium-high heat and sear the chuck roast on all sides until browned.
- Place the roast in the slow cooker.
- In a bowl, whisk together onion soup mix, beef broth, cream of mushroom soup, Worcestershire sauce, and black pepper.
- Pour gravy mixture over the roast.
- Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours until beef is fall-apart tender.
- Shred the beef directly in the crockpot and stir into the gravy.
- To serve, place bread on a plate, top with mashed potatoes, shredded beef, and plenty of gravy.
Notes
Beef Manhattan is traditionally served open-faced. Toast the bread lightly if you prefer extra texture. Leftover beef is excellent over egg noodles or rice.
