  • 1 1/2 lbs beef chuck roast or stew meat, sliced thin
  • 4 cups beef broth
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
  • 1 tbsp sesame oil
  • 1 cup sliced carrots
  • 1 cup sliced mushrooms
  • 2 packs ramen noodles (discard seasoning packets)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (optional)

  1. Add beef, beef broth, soy sauce, brown sugar, garlic, ginger, sesame oil, carrots, and mushrooms to the slow cooker.
  2. Stir gently to combine.
  3. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until beef is tender.
  4. About 20–30 minutes before serving, add ramen noodles directly to the slow cooker.
  5. Cover and cook until noodles are tender, stirring once or twice.
  6. Taste and adjust seasoning if needed.
  7. Garnish with green onions and sesame seeds before serving.

Notes

For extra heat, add red pepper flakes or sriracha. You can swap ramen for udon noodles—just adjust cooking time accordingly.
