Slow Cooker Beef Ramen Noodles is a comforting, flavorful meal featuring tender beef slow-cooked in a savory broth with vegetables and ramen noodles. Perfect for an easy weeknight dinner.

  • 2 lbs beef chuck roast, cut into chunks
  • 4 cups beef broth
  • 1/2 cup soy sauce
  • 1/4 cup hoisin sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 cups sliced mushrooms
  • 2 cups chopped carrots
  • 2 cups chopped bok choy or spinach
  • 34 packages ramen noodles (discard seasoning packets)
  • Optional: sliced green onions and sesame seeds for garnish

Instructions

  1. Place beef chunks in the slow cooker.
  2. In a bowl, whisk together beef broth, soy sauce, hoisin sauce, brown sugar, garlic, and ginger. Pour over beef.
  3. Add mushrooms and carrots to the slow cooker.
  4. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is tender.
  5. About 30 minutes before serving, stir in bok choy or spinach.
  6. Add ramen noodles and cook 5–7 minutes until tender.
  7. Serve hot, garnished with green onions and sesame seeds if desired.

Notes

You can substitute chicken or vegetable broth for beef broth. For more heat, add a dash of Sriracha or red pepper flakes.
