- 2 lbs beef chuck roast, cut into chunks
- 4 cups beef broth
- 1/2 cup soy sauce
- 1/4 cup hoisin sauce
- 2 tbsp brown sugar
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 cups sliced mushrooms
- 2 cups chopped carrots
- 2 cups chopped bok choy or spinach
- 3–4 packages ramen noodles (discard seasoning packets)
- Optional: sliced green onions and sesame seeds for garnish

- Place beef chunks in the slow cooker.
- In a bowl, whisk together beef broth, soy sauce, hoisin sauce, brown sugar, garlic, and ginger. Pour over beef.
- Add mushrooms and carrots to the slow cooker.
- Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef is tender.
- About 30 minutes before serving, stir in bok choy or spinach.
- Add ramen noodles and cook 5–7 minutes until tender.
- Serve hot, garnished with green onions and sesame seeds if desired.
Notes
You can substitute chicken or vegetable broth for beef broth. For more heat, add a dash of Sriracha or red pepper flakes.
