  • 12 oz smoked sausage or andouille, sliced
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 celery ribs, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp Cajun seasoning (adjust to taste)
  • 1/2 tsp black pepper
  • 1 bay leaf
  • 2 cups cooked white rice (for serving)
  • Sliced green onions (optional garnish)

  1. Add beans, sausage, onion, bell pepper, celery, garlic, broth, spices, and bay leaf to the slow cooker.
  2. Stir to combine.
  3. Cover and cook on LOW for 7–8 hours or on HIGH for 4–5 hours, until beans are tender.
  4. Remove bay leaf.
  5. For a creamier texture, mash some of the beans with a spoon and stir back in.
  6. Serve hot over cooked rice and garnish with green onions if desired.

Notes

For extra heat, add cayenne pepper or hot sauce. If using canned beans, reduce liquid and cooking time. Always ensure beans are fully cooked before serving.
