  • 1 lb dried red kidney beans, rinsed and soaked overnight
  • 1 lb smoked sausage, sliced into rounds
  • 1 small onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 1 tsp Cajun seasoning
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 2 cups cooked white rice, for serving
  • Optional garnish: sliced green onions, hot sauce

  1. Place soaked red beans, sliced sausage, onion, bell pepper, celery, garlic, and chicken broth in the slow cooker.
  2. Stir in paprika, thyme, Cajun seasoning, black pepper, and salt.
  3. Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beans are tender and creamy.
  4. Check liquid levels; add water or broth if needed during cooking.
  5. Serve beans over cooked white rice and garnish with green onions and hot sauce if desired.

Notes

For a quicker version, use canned beans (2–3 cans, drained) and reduce cook time to 2–3 hours on HIGH. This dish tastes even better the next day and freezes well.
