- 1 (14.5 oz) can diced tomatoes, undrained

- 1 tsp smoked paprika

- Optional garnish: chopped green onions or parsley

- Add uncooked rice, diced tomatoes with juice, chicken broth, smoked paprika, thyme, cayenne, salt, and pepper. Stir to combine.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until chicken is cooked through and rice is tender.
- Stir gently to combine. Adjust seasoning if needed.
- Garnish with green onions or parsley and serve hot.
Notes
For extra flavor, marinate chicken in Cajun seasoning before adding to the slow cooker. You can swap white rice for brown rice, but cooking time may increase. Leftovers store well in the fridge for 3–4 days.
