- 1 1/2 lbs boneless, skinless chicken breasts, cubed
- 12 oz smoked sausage, sliced
- 1 tbsp olive oil
- 1 onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 tsp paprika
- 1 tsp Cajun seasoning
- 1/2 tsp dried thyme
- 1/2 tsp dried oregano
- 1/2 tsp black pepper
- 1 cup uncooked long-grain rice
- Salt, to taste
- Fresh parsley, for garnish

- Add chicken, sausage, onion, bell peppers, and garlic to the slow cooker.
- Stir in diced tomatoes, chicken broth, and all seasonings.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
- Stir in uncooked rice.
- Cover and cook on HIGH for an additional 30–45 minutes, until rice is tender.
- Taste and adjust seasoning with salt if needed.
- Garnish with fresh parsley and serve hot.
Notes
For extra heat, add cayenne pepper or hot sauce. You can substitute shrimp for part of the chicken—add shrimp during the last 30 minutes of cooking.
