- 1 lb ground beef or turkey
- 1 small onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream or Greek yogurt
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste

- In a skillet, cook ground beef and onion over medium heat until beef is browned and onion is softened. Drain excess fat.
- Transfer beef and onion to the slow cooker.
- Add black beans, corn, diced tomatoes with chilies, chili powder, cumin, salt, and pepper. Stir to combine.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.
- 30 minutes before serving, stir in sour cream and 1/2 cup cheddar cheese. Cover and let melt.
- Serve hot, topped with additional cheese, green onions, or tortilla chips if desired.
Notes
You can swap ground beef for ground turkey or chicken for a leaner option. Add cooked rice or quinoa to make it more filling. For extra spice, add chopped jalapeños or a dash of hot sauce.
