- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1/2 cup barbecue sauce
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese (optional)
- Fresh cilantro or green onions for garnish (optional)

- In a skillet, cook ground beef with diced onion and garlic over medium heat until beef is browned and onion is softened. Drain excess fat.
- Transfer beef mixture to the slow cooker.
- Add black beans, corn, diced tomatoes, barbecue sauce, chili powder, paprika, salt, and pepper. Stir to combine.
- Cover and cook on LOW for 4–5 hours or on HIGH for 2–3 hours.
- About 15 minutes before serving, sprinkle shredded cheddar cheese on top and cover to melt.
- Garnish with fresh cilantro or green onions if desired, then serve warm.
Notes
This casserole is very flexible — add bell peppers or jalapeños for extra flavor. Serve with rice, tortillas, or cornbread for a complete meal.
