  • 1 1/2 lbs boneless, skinless chicken breasts or thighs
  • 3 cups baby potatoes, halved
  • 2 cups baby carrots
  • 1 cup green beans, trimmed
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter, melted
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Optional: fresh parsley for garnish

  1. Place baby potatoes, carrots, and green beans in the bottom of the slow cooker.
  2. Season chicken with salt, pepper, thyme, and parsley, then place on top of the vegetables.
  3. In a small bowl, mix melted butter, garlic, and chicken broth. Pour over the chicken and vegetables.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is fully cooked and vegetables are tender.
  5. Optional: sprinkle fresh parsley over the top before serving.
  6. Serve hot as a complete meal.

Notes

For extra flavor, sear the chicken in a skillet for 1–2 minutes per side before adding to the slow cooker. You can also swap vegetables based on preference or seasonality.
