  • 4 boneless, skinless chicken breasts
  • 1 1/2 cups long-grain white rice
  • 2 1/2 cups low-sodium chicken broth
  • 1/4 cup fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil or melted butter
  • Optional: chopped parsley or lemon zest for garnish

  5. Cover and cook on low for 4–5 hours or on high for 2–3 hours, until chicken is cooked through and rice is tender.
  6. Optional: garnish with chopped parsley or lemon zest before serving.
