  • 4 boneless, skinless chicken breasts or thighs
  • 1 1/2 cups long-grain rice, rinsed
  • 2 1/2 cups chicken broth
  • 1 lemon, zested and juiced
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme or 2 tsp fresh thyme leaves
  • Salt and black pepper, to taste
  • 2 tbsp olive oil or melted butter
  • Optional: chopped parsley for garnish

Instructions

  1. Place chicken in the slow cooker and season with garlic powder, onion powder, thyme, salt, and pepper.
  2. Drizzle with olive oil and lemon juice, and sprinkle lemon zest over chicken.
  3. Rinse rice and spread evenly around the chicken.
  4. Pour chicken broth over the rice and chicken.
  5. Cover and cook on low for 4–5 hours or on high for 2–3 hours until chicken is cooked through and rice is tender.
  6. Fluff rice gently, garnish with parsley, and serve warm.

Notes

For extra flavor, add sliced onions or bell peppers. Ensure rice is fully submerged in liquid for even cooking.
