- 1 1/2 lbs flank steak, thinly sliced against the grain
- 1/4 cup cornstarch
- 1/4 cup soy sauce (low-sodium)
- 1/4 cup brown sugar or coconut sugar
- 3 cloves garlic, minced
- 1/2 tsp ginger, minced
- 1/2 tsp black pepper
- 1/2 cup beef broth or water
- 4 green onions, sliced
- 1 tbsp vegetable oil (for optional searing)
- Optional: sesame seeds for garnish

- Toss the sliced beef in cornstarch until well coated.
- Optional: heat oil in a skillet and quickly sear beef on high heat for 1–2 minutes per side for extra flavor.
- Place beef in the slow cooker.
- In a small bowl, mix soy sauce, brown sugar, garlic, ginger, black pepper, and beef broth. Pour over beef in the slow cooker.
- Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until beef is tender and sauce is thickened.
- Stir in green onions just before serving.
- Serve hot over steamed rice or noodles and garnish with sesame seeds if desired.
Notes
For thicker sauce, mix 1 tsp cornstarch with 1 tbsp water and stir into the slow cooker during the last 30 minutes of cooking. Adjust sweetness and soy sauce to taste.
