- Sprinkle in thyme, rosemary, salt, and pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.
- Optional: stir in cornstarch slurry 15–20 minutes before serving to thicken the stew.
- Garnish with fresh parsley or thyme before serving. Serve over rice, mashed potatoes, or crusty bread.
Notes
For richer flavor, use bone-in chicken thighs. You can also add mushrooms or peas in the last 30 minutes of cooking.
