  • 2 lbs boneless, skinless chicken thighs or breasts
  • 4 medium carrots, sliced
  • 3 celery stalks, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup white wine
  • 1 1/2 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Optional garnish: fresh parsley or thyme

  1. Place chicken, carrots, celery, onion, and garlic in the slow cooker.
  2. Pour white wine and chicken broth over the ingredients.
  3. Sprinkle in thyme, rosemary, salt, and pepper.
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until chicken is tender.
  5. Optional: stir in cornstarch slurry 15–20 minutes before serving to thicken the stew.
  6. Garnish with fresh parsley or thyme before serving. Serve over rice, mashed potatoes, or crusty bread.

Notes

For richer flavor, use bone-in chicken thighs. You can also add mushrooms or peas in the last 30 minutes of cooking.
