  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

For the Buttercream Frosting

  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 12 tablespoons milk or heavy cream
  • 1/2 teaspoon vanilla extract
  • Green food coloring
  • Green sprinkles (optional)

  1. Preheat oven: Preheat to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter & sugar: Beat butter and sugar until light and fluffy. Add egg and vanilla and mix until combined.
  3. Combine dry ingredients: In a separate bowl, whisk flour, baking powder, and salt.
  4. Form dough: Gradually add dry ingredients to wet mixture until a soft dough forms.
  5. Roll & cut: Roll dough to 1/4-inch thickness on a lightly floured surface. Cut into shamrock or festive shapes.
  6. Bake: Bake for 8–10 minutes, until edges are lightly golden. Cool completely on a wire rack.
  7. Make buttercream: Beat butter until creamy. Gradually add powdered sugar, milk, and vanilla. Mix until smooth and fluffy. Add green food coloring.
  8. Decorate: Frost cooled cookies and top with sprinkles if desired. Let frosting set before serving.

Notes

If the dough becomes too soft, chill for 30 minutes before rolling. Store frosted cookies in an airtight container at room temperature for up to 4 days.
