- Melt chocolate: Melt white chocolate in a microwave-safe bowl in 30-second intervals, stirring until smooth. Tint with green food coloring.
- Dip truffles: Using a fork, dip each chilled ball into melted chocolate, allowing excess to drip off. Place back on parchment paper.
- Decorate: Immediately add sprinkles before coating sets. Refrigerate 15–20 minutes until firm.
