Description
Sticky Guinness Chicken is a rich and savory dish featuring tender chicken coated in a sweet and tangy Guinness glaze. Perfect for weeknight dinners or St. Patrick’s Day celebrations, this dish delivers bold flavor with a beautiful caramelized finish.
Ingredients
Ingredients
- 6 bone-in, skin-on chicken thighs (or 4 large chicken breasts)
- Salt and black pepper to taste
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup Guinness stout
- 1/4 cup brown sugar
- 2 tbsp soy sauce
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp fresh thyme (optional)
Instructions
Instructions
- Season chicken: Pat chicken dry and season both sides with salt and pepper.
- Sear: Heat olive oil in a large skillet over medium-high heat. Sear chicken skin-side down for 5–6 minutes until golden brown. Flip and cook 3 minutes more. Remove from pan.
- Prepare sauce: Reduce heat to medium. Add garlic and sauté 30 seconds. Pour in Guinness, scraping up browned bits from the pan.
- Add flavorings: Stir in brown sugar, soy sauce, Dijon mustard, apple cider vinegar, and thyme. Simmer 5 minutes until slightly thickened.
- Cook through: Return chicken to the pan. Spoon sauce over the top, cover, and simmer 20–25 minutes until chicken is cooked through and sauce becomes sticky and glossy.
- Finish: Remove lid and simmer a few extra minutes if needed to thicken sauce further. Spoon glaze over chicken before serving.
Notes
Boneless chicken can be used but may require slightly less cooking time. For extra caramelization, broil the chicken for 2–3 minutes at the end. Serve with mashed potatoes, rice, or roasted vegetables.
