- Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time, then add mashed bananas and vanilla extract.
- Gradually fold in dry ingredients until just combined. Gently fold in strawberries and nuts if using.
- Pour batter into prepared loaf pan and smooth the top.
- Bake 55–65 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use very ripe bananas for maximum sweetness and moisture. Fresh strawberries are preferred, but frozen (thawed) can also be used. Add-ins like chocolate chips or shredded coconut work well for variation.
