- In a large bowl, cream together butter, granulated sugar, and powdered sugar until light and fluffy.
- Beat in egg and vanilla extract until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to wet ingredients until combined.
- Roll dough into 1-inch balls and place on prepared baking sheets, spacing 2 inches apart.
- Bake 10–12 minutes until edges are lightly golden.
- Immediately press a strawberry chocolate kiss into the center of each cookie. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Cookies can be stored in an airtight container at room temperature for up to 5 days. For extra flavor, use a strawberry jam-filled chocolate or sprinkle lightly with powdered sugar before serving.
