- In a medium bowl, whisk together flour, baking soda, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add egg, vanilla, and strawberry puree; mix until combined.
- Gradually add dry ingredients, mixing until just incorporated.
- Drop rounded tablespoons of dough onto prepared baking sheets.
- Optional: sprinkle extra sugar on top of each cookie.
- Bake 10–12 minutes until edges are lightly golden.
- Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
Notes
Use fresh, ripe strawberries for best flavor. If the dough is too wet from the puree, chill for 30 minutes before baking. Cookies can be stored in an airtight container for up to 3 days.
