  • 1 tbsp olive oil
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 tsp ground ginger or 1 tsp fresh grated ginger
  • 1 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)
  • Optional garnish: green onions, sesame seeds

  1. Cook chicken: In a large skillet or wok, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
  2. Sauté vegetables: In the same skillet, add garlic, red and green bell peppers, and pineapple chunks. Cook 2–3 minutes until slightly softened.
  3. Make sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, and ginger.
  4. Combine: Return chicken to the skillet and pour the sauce over. Stir to coat. If using cornstarch, add mixture and cook 1–2 minutes until sauce thickens.
  5. Serve: Garnish with sliced green onions and sesame seeds. Serve over rice, noodles, or quinoa.

Notes

For extra flavor, marinate chicken for 15–30 minutes before cooking. Adjust sweetness or tanginess of the sauce to taste.
