- In a large bowl, toss sweet potato cubes with olive oil, salt, pepper, and paprika.
- Spread evenly on the prepared baking sheet and roast for 20–25 minutes, turning halfway through.
- In a small bowl, mix honey, minced garlic, and soy sauce.
- Remove sweet potatoes from oven, drizzle honey garlic mixture over them, and toss gently.
- Return to oven for 5–10 minutes until caramelized and tender.
- Garnish with fresh herbs and serve warm.
Notes
For extra crispiness, avoid overcrowding the pan. You can add a pinch of chili flakes for a sweet-spicy twist. Leftovers can be stored in the refrigerator for up to 3 days.
