- In a large bowl, combine mashed potatoes, flour, salt, melted butter, and chives (if using) to form a soft dough.
- Turn dough onto a floured surface and gently knead until smooth. Do not overwork.
- Divide dough into 4 equal portions and shape each into a round disc about 1/2 inch thick.
- Heat a non-stick skillet or griddle over medium heat and add a small amount of butter.
- Cook each farl for 4–5 minutes per side, or until golden brown and cooked through.
- Serve warm with butter, jam, or alongside eggs and bacon for a traditional Irish breakfast.
Notes
For best results, use leftover mashed potatoes that are not too watery. Farls can also be cooked on a griddle for a slightly crispier texture.
