  • 2 cups mashed potatoes (prepared and cooled)
  • 1 cup all-purpose flour (plus extra for dusting)
  • 1/2 tsp salt
  • 2 tbsp unsalted butter, melted (plus extra for cooking)
  • Optional: chopped chives for flavor

  1. In a large bowl, combine mashed potatoes, flour, salt, melted butter, and chives (if using) to form a soft dough.
  2. Turn dough onto a floured surface and gently knead until smooth. Do not overwork.
  3. Divide dough into 4 equal portions and shape each into a round disc about 1/2 inch thick.
  4. Heat a non-stick skillet or griddle over medium heat and add a small amount of butter.
  5. Cook each farl for 4–5 minutes per side, or until golden brown and cooked through.
  6. Serve warm with butter, jam, or alongside eggs and bacon for a traditional Irish breakfast.

Notes

For best results, use leftover mashed potatoes that are not too watery. Farls can also be cooked on a griddle for a slightly crispier texture.
