- 3–4 lbs beef chuck roast
- 1 packet ranch seasoning mix (1 oz)
- 1 packet au jus gravy mix (1 oz)
- 1/2 cup unsalted butter (1 stick)
- 6–8 pepperoncini peppers
- Optional: 1 tsp black pepper
- Optional garnish: chopped parsley

- Place the beef chuck roast in the bottom of the crockpot.
- Sprinkle ranch seasoning and au jus mix evenly over the roast.
- Place the stick of butter on top of the roast.
- Scatter pepperoncini peppers around and on top of the roast.
- Cover and cook on LOW for 8 hours or HIGH for 4–5 hours, until the meat is tender and shreds easily.
- Remove roast from crockpot and shred with two forks. Mix with the juices in the crockpot before serving.
- Garnish with parsley if desired. Serve with mashed potatoes, rice, or crusty bread.
Notes
For extra flavor, sear the roast in a hot skillet for 2–3 minutes per side before adding to the crockpot. Adjust the number of pepperoncini peppers depending on desired heat level. Leftovers store well in the fridge for 3–4 days.
