  • 2 cups old-fashioned rolled oats
  • 1 1/2 cups all-purpose flour
  • 1 cup light brown sugar, packed
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1 cup unsalted butter, melted

For the Rhubarb Filling

  • 4 cups fresh rhubarb, diced
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract

  1. Prepare the pan: Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. Make the crumb mixture: In a large bowl, combine the oats, flour, brown sugar, cinnamon, and salt. Stir in the melted butter until coarse crumbs form. Press about two-thirds of the mixture firmly into the prepared pan to create the crust.
  3. Prepare the filling: In another bowl, toss the diced rhubarb with the granulated sugar, cornstarch, lemon juice, and vanilla. Spread the mixture evenly over the crust.
  4. Add the topping and bake: Sprinkle the remaining oat crumble evenly over the rhubarb filling. Bake for 40–45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  5. Cool and slice: Allow the bars to cool completely before cutting into squares. Serve at room temperature or chilled.

Notes

For cleaner slices, refrigerate the bars for at least 1 hour after cooling. Frozen rhubarb may be used—thaw and drain it well before mixing with the filling ingredients. These bars are delicious on their own or served with whipped cream or vanilla ice cream.
