  • 8 cups chicken broth
  • 1 cup cooked shredded chicken
  • 3/4 cup uncooked white rice
  • 3 large eggs
  • 1/3 cup freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley or dill, chopped (for garnish)

  1. Cook the rice: In a large pot, bring the chicken broth to a boil. Add the rice and reduce heat to a simmer. Cook for 15–18 minutes, or until the rice is tender.
  2. Add the shredded chicken and cook for 2–3 minutes until heated through.
  3. Prepare the egg-lemon mixture: In a medium bowl, whisk the eggs until frothy. Gradually whisk in the lemon juice and lemon zest.
  4. Temper the eggs: Slowly ladle about 1 cup of the hot broth into the egg mixture while whisking constantly.
  5. Gradually add another cup of hot broth, continuing to whisk.
  6. Finish the soup: Remove the pot from heat. Slowly pour the tempered egg mixture into the soup while stirring continuously.
  7. Season with salt and black pepper to taste.
  8. Do not boil the soup after adding the eggs, as this may cause curdling.
  9. Serve: Garnish with fresh parsley or dill and additional lemon slices if desired.

Notes

Tempering the eggs slowly is the key to achieving a smooth, creamy broth. For extra richness, use homemade chicken stock. Leftovers can be reheated gently over low heat, but avoid boiling.
