- Cook the rice: In a large pot, bring the chicken broth to a boil. Add the rice and reduce heat to a simmer. Cook for 15–18 minutes, or until the rice is tender.
- Add the shredded chicken and cook for 2–3 minutes until heated through.
- Prepare the egg-lemon mixture: In a medium bowl, whisk the eggs until frothy. Gradually whisk in the lemon juice and lemon zest.
- Temper the eggs: Slowly ladle about 1 cup of the hot broth into the egg mixture while whisking constantly.
- Gradually add another cup of hot broth, continuing to whisk.
- Finish the soup: Remove the pot from heat. Slowly pour the tempered egg mixture into the soup while stirring continuously.
- Season with salt and black pepper to taste.
- Do not boil the soup after adding the eggs, as this may cause curdling.
- Serve: Garnish with fresh parsley or dill and additional lemon slices if desired.
Notes
Tempering the eggs slowly is the key to achieving a smooth, creamy broth. For extra richness, use homemade chicken stock. Leftovers can be reheated gently over low heat, but avoid boiling.
