- 2 cups cherry tomatoes

- 2 1/2 cups vegetable or chicken broth
- 1 cup baby spinach
- 1 tbsp lemon juice

- Add orzo: Stir in uncooked orzo and broth. Mix gently.
- Bake again: Return to oven for 15–20 minutes, stirring halfway, until orzo is tender.
- Finish: Stir in spinach and lemon juice until wilted and creamy.
- Serve: Garnish with fresh basil and red pepper flakes if desired.
Notes
For extra creaminess, add a splash of cream or more broth when stirring. You can also add grilled chicken or shrimp for protein.
