  • 1 block (7–8 oz) feta cheese
  • 2 cups cherry tomatoes
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 1/2 cups vegetable or chicken broth
  • 1 cup baby spinach
  • 1 tbsp lemon juice
  • Fresh basil for garnish
  • Optional: red pepper flakes

  1. Preheat oven: Set to 400°F (200°C).
  2. Assemble: In a baking dish, add cherry tomatoes, garlic, and olive oil. Place feta block in the center.
  3. Season: Sprinkle oregano, salt, and pepper over everything.
  4. Bake: Bake for 25 minutes until tomatoes burst and feta is soft.
  5. Add orzo: Stir in uncooked orzo and broth. Mix gently.
  6. Bake again: Return to oven for 15–20 minutes, stirring halfway, until orzo is tender.
  7. Finish: Stir in spinach and lemon juice until wilted and creamy.
  8. Serve: Garnish with fresh basil and red pepper flakes if desired.

Notes

For extra creaminess, add a splash of cream or more broth when stirring. You can also add grilled chicken or shrimp for protein.
