- Combine the wet ingredients: In another bowl, whisk eggs, milk, melted butter, and vanilla until smooth.
- Prepare the batter: Stir the wet ingredients into the dry ingredients until just combined, then gently fold in the chopped rhubarb.
- Shape the fritters: Scoop mounds of batter onto the prepared baking sheet, leaving space between each fritter.
- Bake: Bake for 18–22 minutes, or until lightly golden and cooked through.
- Glaze and serve: Whisk together powdered sugar, milk, and vanilla. Drizzle over slightly cooled fritters before serving.
Notes
For extra flavor, add a pinch of nutmeg or a little orange zest to the batter. These fritters are best enjoyed the day they’re baked but can be stored in an airtight container for up to 2 days and gently reheated before serving.
