- Bring to a gentle boil, then reduce heat and simmer uncovered for 18–22 minutes, until chicken is cooked through.
- Remove chicken, shred with two forks, and return to the pot.
- Stir in Greek yogurt until creamy and well combined.
- Simmer 5 more minutes, then remove from heat.
- Garnish with fresh cilantro before serving.
Notes
