- Preheat oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Make the filling: In a bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- Slice each croissant horizontally without cutting all the way through.
- Spread a generous amount of cream cheese filling inside each croissant.
- Add blueberries evenly among the croissants.
- Prepare egg wash: Whisk together egg and water. Brush lightly over the tops of the croissants.
- Place on the prepared baking sheet and bake for 10–12 minutes until lightly golden and warmed through.
- Allow to cool for a few minutes.
- Serve: Dust with powdered sugar before serving.
Notes
Fresh blueberries work best, but frozen blueberries can be used without thawing. For extra sweetness, drizzle the croissants with a simple glaze made from powdered sugar and milk after baking.
