  2. Prepare the dough: Whisk together the flour, baking soda, baking powder, salt, and cinnamon. In a separate bowl, cream the butter and brown sugar until fluffy. Beat in the egg and vanilla, then gradually mix in the dry ingredients. Fold in the diced rhubarb.
  3. Shape the cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheets, leaving about 2 inches between each cookie.
  4. Bake: Bake for 10–12 minutes, or until the edges are lightly golden while the centers remain soft. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  5. Finish: If desired, whisk together the glaze ingredients and drizzle over the completely cooled cookies before serving.

Notes

Pat the diced rhubarb dry before folding it into the dough to prevent excess moisture. Store cookies in an airtight container for up to 3 days, or freeze for up to 2 months. Chopped pecans or white chocolate chips also make delicious additions.
