  • 2 tbsp all-purpose flour
  • 2 cups red wine
  • 2 cups beef broth
  • 2 bay leaves
  • 4 sprigs fresh thyme
  • 1 tsp dried parsley

For the Vegetables

  • 1 lb mushrooms, sliced
  • 1 cup pearl onions
  • 2 tbsp butter
  • Fresh parsley for garnish

  1. Prepare the beef: Pat beef dry with paper towels and season generously with salt and pepper.
  2. Cook the bacon: In a large Dutch oven, cook bacon until crisp. Remove and set aside, leaving the rendered fat in the pot.
  3. Brown the beef: Sear beef pieces in batches until deeply browned on all sides. Transfer to a plate.
  4. Build the flavor base: Add onions and carrots to the pot and cook until softened. Stir in garlic, tomato paste, and flour.
  5. Create the sauce: Return beef and bacon to the pot. Add red wine, beef broth, bay leaves, and thyme. Bring to a simmer.
  6. Braise slowly: Cover and cook in a 325°F (160°C) oven for 2 1/2–3 hours until the beef is tender.
  7. Finish and serve: Sauté mushrooms and pearl onions in butter, then stir into the stew. Remove herbs and garnish with parsley before serving.
