  • 1 1/2 cups sweet corn (fresh, canned, or thawed frozen)

  • 1 red bell pepper, diced
  • 1 jalapeño, finely diced
  • 1/2 small red onion, diced
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped

For the Dressing

  • 1/4 cup olive oil
  • 3 tbsp fresh lime juice
  • 2 tbsp red wine vinegar
  • 1 tbsp honey
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste

  1. Prepare the vegetables: Dice the bell pepper, onion, jalapeño, avocado, and halve the tomatoes.
  2. Combine the ingredients: In a large bowl, add the black beans, black-eyed peas, corn, tomatoes, bell pepper, onion, jalapeño, cilantro, and avocado.
  3. Make the dressing: Whisk together the olive oil, lime juice, red wine vinegar, honey, chili powder, cumin, garlic powder, salt, and black pepper until smooth.
  4. Toss everything together: Pour the dressing over the bean mixture and gently stir until evenly coated.
  5. Chill: Refrigerate for at least 30 minutes to allow the flavors to blend.
  6. Taste and adjust: Add additional lime juice, salt, or cilantro if desired before serving.
