  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, quartered
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and diced
  • 1 avocado, diced
  • 1/2 cup fresh cilantro, chopped

For the Dressing

  • 1/3 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tbsp red wine vinegar
  • 1 tsp honey
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 garlic clove, minced
  • Salt and black pepper, to taste

For Serving

  • Tortilla chips
  • Lime wedges
  • Extra cilantro
  • Hot sauce (optional)

  1. Prepare the vegetables: Dice peppers, tomatoes, onion, jalapeño, avocado, and cilantro.
  2. Combine ingredients: Add black beans, black-eyed peas, corn, and prepared vegetables to a large mixing bowl.
  3. Make the dressing: Whisk olive oil, lime juice, vinegar, honey, chili powder, cumin, garlic, salt, and pepper together.
  4. Toss the caviar: Pour dressing over the bean and vegetable mixture and gently stir until evenly coated.
  5. Add avocado: Fold in avocado carefully to keep the pieces intact.
  6. Chill: Refrigerate for at least 30 minutes to allow flavors to blend.
