  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • 1 tsp fresh rosemary, chopped (or 1/2 tsp dried)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp Irish stout or beef broth (optional, for pan sauce)
  • 1 tbsp butter (optional, for finishing)

  1. Prepare steaks: Pat steaks dry and season both sides with salt, pepper, thyme, and rosemary.
  2. Heat pan: Heat olive oil in a heavy skillet over medium-high heat until shimmering.
  3. Sear steaks: Place steaks in the pan and cook 3–4 minutes per side for medium-rare, or longer to desired doneness.
  4. Optional pan sauce: Remove steaks and let rest. Add garlic and Irish stout or beef broth to pan, scraping up browned bits. Simmer 1–2 minutes, then stir in butter for a glossy finish.
  5. Serve: Plate steaks and drizzle with pan sauce if using. Serve with roasted vegetables, mashed potatoes, or a side salad.

Notes

Allow steaks to rest 5 minutes before slicing to retain juices. Use a meat thermometer for precise doneness. Fresh herbs enhance flavor, but dried herbs are fine if needed.
