  • 1 lb ground pork (or ground chicken/turkey)
  • 1 tbsp sesame oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 6 cups chicken broth
  • 4 cups green cabbage, shredded
  • 1 cup carrots, shredded
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha (optional)
  • 2 green onions, sliced
  • Salt and black pepper, to taste
  • Sesame seeds, for garnish

  1. Brown the meat: Heat sesame oil in a large soup pot over medium-high heat. Add ground pork and cook until browned, breaking it apart as it cooks.
  2. Add the diced onion and cook for 3–4 minutes until softened.
  3. Stir in garlic and ginger and cook for 1 minute until fragrant.
  4. Build the soup: Pour in the chicken broth, soy sauce, rice vinegar, and sriracha if using.
  5. Add the shredded cabbage and carrots and bring to a gentle boil.
  6. Reduce heat and simmer for 15–20 minutes, until vegetables are tender.
  7. Taste and season with salt and black pepper as needed.
  8. Serve: Ladle into bowls and garnish with green onions and sesame seeds.

Notes

For extra protein, stir in a beaten egg during the last minute of cooking. This soup stores well in the refrigerator for up to 4 days and tastes even better the next day.
