- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sriracha (optional)
- 2 green onions, sliced

- Brown the meat: Heat sesame oil in a large soup pot over medium-high heat. Add ground pork and cook until browned, breaking it apart as it cooks.
- Add the diced onion and cook for 3–4 minutes until softened.
- Stir in garlic and ginger and cook for 1 minute until fragrant.
- Build the soup: Pour in the chicken broth, soy sauce, rice vinegar, and sriracha if using.
- Add the shredded cabbage and carrots and bring to a gentle boil.
- Reduce heat and simmer for 15–20 minutes, until vegetables are tender.
- Taste and season with salt and black pepper as needed.
- Serve: Ladle into bowls and garnish with green onions and sesame seeds.
Notes
For extra protein, stir in a beaten egg during the last minute of cooking. This soup stores well in the refrigerator for up to 4 days and tastes even better the next day.
