  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 2 tbsp orange zest
  • 1/3 cup fresh orange juice
  • 1/3 cup milk
  • 1 cup fresh or dried cranberries (chopped if large)
  • 1 tsp vanilla extract

Orange Buttercream

  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 23 tbsp orange juice
  • 1 tsp orange zest

  1. Preheat oven: Set to 350°F (175°C) and line a cupcake pan.
  2. Mix dry ingredients: Whisk flour, baking powder, and salt.
  3. Cream butter: Beat butter and sugar until light and fluffy.
  4. Add eggs & flavor: Mix in eggs, orange zest, juice, and vanilla.
  5. Combine: Alternate adding dry ingredients and milk until smooth.
  6. Add cranberries: Fold in cranberries gently.
  7. Bake: Fill liners and bake 18–22 minutes. Cool completely.
  8. Make frosting: Beat butter, powdered sugar, orange juice, and zest until smooth.
  9. Frost: Pipe or spread frosting onto cooled cupcakes.

Notes

If using fresh cranberries, toss them in a little flour to prevent sinking. For extra flavor, add a touch of vanilla or almond extract to the frosting.
