  • 1 tbsp salt (for pasta water)

For the Garlic Parmesan Sauce

  • 2 tbsp unsalted butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 1/2 cups freshly grated Parmesan cheese
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt to taste

  • Fresh parsley, chopped
  • Extra grated Parmesan cheese
  • Fresh cracked black pepper

  1. Cook the spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to package directions. Reserve 1/2 cup pasta water before draining.
  2. Cook the garlic: In a large skillet over medium heat, melt the butter. Add the minced garlic and cook for 1 minute until fragrant.
  3. Make the sauce: Pour in the heavy cream and milk, stirring constantly. Simmer gently for 3-4 minutes without boiling.
  4. Add the Parmesan cheese gradually, whisking until fully melted and smooth.
  5. Season with black pepper, Italian seasoning, crushed red pepper flakes if using, and salt to taste.
  6. Combine: Add the cooked spaghetti to the skillet and toss until evenly coated.
  7. If needed, stir in a little reserved pasta water to loosen the sauce.
  8. Serve immediately topped with extra Parmesan, parsley, and freshly cracked black pepper.

Notes

Freshly grated Parmesan melts much better than pre-shredded cheese. If the sauce thickens too much, simply stir in additional reserved pasta water until it reaches your desired consistency. Add grilled chicken or shrimp for extra protein.
