  • 1 tsp Italian seasoning
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes (optional)
  • 1 (14 oz) can artichoke hearts, drained and chopped
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • Salt and black pepper to taste
  • 2 cups fresh spinach (optional)

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 3–4 minutes.
  2. Add garlic & spices: Stir in garlic, Italian seasoning, thyme, and red pepper flakes. Cook for 1 minute until fragrant.
  3. Add artichokes: Stir in chopped artichoke hearts and cook for 2–3 minutes.
  4. Add broth: Pour in broth and bring to a gentle simmer. Cook for 10–15 minutes.
  5. Blend (optional): For a creamier texture, blend part of the soup using an immersion blender, leaving some chunks.
  6. Add cream & cheese: Stir in heavy cream and Parmesan cheese until smooth and creamy.
  7. Brighten: Add lemon juice and lemon zest. Season with salt and pepper to taste.
  8. Add greens: Stir in spinach if using and cook until wilted.
  9. Serve: Ladle into bowls and serve warm.

Notes

For a lighter version, substitute half-and-half for heavy cream. Roasted artichokes can be used for deeper flavor. This soup pairs beautifully with crusty bread or garlic toast.
