For the Creamy Tortellini Sauce

  • 20 oz refrigerated cheese tortellini
  • 3 tbsp butter
  • 4 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • 3 cups fresh spinach

  • Fresh parsley
  • Extra Parmesan cheese
  • Lemon wedges

  1. Cook the tortellini: Bring a large pot of salted water to a boil. Cook tortellini according to package directions until tender. Drain and set aside.
  2. Season and cook the shrimp: Toss shrimp with garlic powder, paprika, Italian seasoning, salt, and pepper. Heat olive oil in a large skillet and cook shrimp for 2–3 minutes per side until pink. Remove and set aside.
  3. Make the cream sauce: In the same skillet, melt butter and sauté garlic until fragrant. Add heavy cream and chicken broth, then simmer gently. Stir in Parmesan cheese and Italian seasoning until smooth.
  4. Add spinach and tortellini: Stir fresh spinach into the sauce until wilted. Add cooked tortellini and gently toss until coated in the creamy sauce.
  5. Finish and serve: Return shrimp to the skillet and warm through. Garnish with parsley, Parmesan, and lemon wedges before serving.

Notes

For the best texture, avoid overcooking the shrimp. Freshly grated Parmesan melts more smoothly into the sauce than pre-shredded cheese. You can substitute half-and-half for a lighter sauce or add mushrooms and sun-dried tomatoes for extra flavor.
