  • 12 oz pasta (penne, fettuccine, or your choice)
  • 2 boneless skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper, to taste
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups baby spinach
  • 1 tbsp fresh basil, chopped
  • Red pepper flakes (optional)

  1. Cook the pasta: Boil pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Cook the chicken: Season chicken with Italian seasoning, paprika, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5–7 minutes until golden and cooked through. Remove and set aside.
  4. Make the sauce: In the same skillet, add garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
  5. Add chicken broth and scrape the bottom of the pan. Stir in heavy cream and simmer for 3–5 minutes.
  6. Add Parmesan cheese and stir until melted and creamy.
  7. Stir in spinach and cook until wilted.
  8. Add pasta and chicken back to the skillet. Toss until coated. Add pasta water if needed to loosen the sauce.
  9. Serve: Garnish with basil and extra Parmesan cheese.

Notes

Use oil-packed sun-dried tomatoes for the best flavor. For a lighter version, substitute half-and-half for heavy cream. Leftovers reheat well with a splash of milk or broth.
