  • 2 large chicken breasts, sliced into cutlets
  • 1/2 cup dill pickle juice
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried dill (or 1 tbsp fresh dill)
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/3 cup oil (for frying)
  • Optional: sliced pickles for serving

  1. Marinate: Soak chicken in dill pickle juice for 30 minutes to 2 hours.
  2. Prep station: Place flour, eggs, and breadcrumb mixture (panko, Parmesan, dill, garlic powder, paprika, pepper) in separate bowls.
  3. Coat chicken: Remove chicken from marinade, pat dry, dredge in flour, dip in egg, then coat in breadcrumb mixture.
  4. Cook: Heat oil in a skillet over medium heat. Fry 3–4 minutes per side until golden and cooked through.
  5. Drain: Place on paper towels to remove excess oil.
  6. Serve: Serve hot with extra pickles or dipping sauce if desired.

Notes

For a lighter version, bake at 425°F (220°C) for 20–25 minutes or air fry at 400°F (200°C) for 12–15 minutes. Don’t skip patting the chicken dry for the crispiest coating.
