- Prepare the slow cooker: Add chicken, onion, carrots, celery, garlic, chicken broth, cream of chicken soup, thyme, parsley, and pepper to the crock pot.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours until the chicken is tender.
- Shred the chicken: Remove the chicken, shred it with two forks, and return it to the slow cooker.
- Stir in frozen peas and heavy cream if using.
- Add the dumplings: Cut each biscuit into 4 pieces and place them on top of the soup mixture.
- Cover and cook on HIGH for 1 additional hour, or until the dumplings are cooked through and fluffy.
- Taste and adjust seasoning with salt if needed.
- Serve: Ladle into bowls and enjoy warm.
Notes
Avoid lifting the lid while the dumplings are cooking, as trapped steam helps them become light and fluffy. For extra vegetables, add corn or green beans during the final hour of cooking.
