  • 1 lb ground beef or Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 1 can (15 oz) tomato sauce
  • 1 tsp Italian seasoning
  • 8 oz cream cheese, softened
  • 1 cup cottage cheese or ricotta cheese
  • 1/2 cup sour cream
  • 12 oz uncooked pasta (penne, rotini, or ziti)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley for garnish

  1. Prepare the meat sauce: In a skillet over medium heat, cook ground beef and onion until browned. Drain excess grease.
  2. Add garlic, marinara sauce, tomato sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  3. Make the cheese mixture: In a bowl, combine cream cheese, cottage cheese, and sour cream until smooth.
  4. Layer the slow cooker: Spread a thin layer of meat sauce in the bottom of the crock pot.
  5. Add half of the uncooked pasta, half of the cheese mixture, and one-third of the mozzarella cheese.
  6. Repeat layers, finishing with remaining meat sauce and the rest of the mozzarella and Parmesan cheese on top.
  7. Cover and cook on LOW for 3–4 hours, or until the pasta is tender.
  8. Let rest for 10 minutes before serving.
  9. Serve: Garnish with fresh parsley and additional Parmesan cheese if desired.

Notes

Different slow cookers vary in cooking time, so begin checking the pasta after 3 hours. For extra flavor, use Italian sausage instead of ground beef. Store leftovers refrigerated for up to 4 days.
