- 1 lb boneless, skinless chicken breasts
- 1 can (13.5 oz) coconut milk
- 3 cups chicken broth
- 1 tbsp red curry paste
- 1 tbsp fresh ginger, grated (or 1 tsp ground ginger)
- 2 cloves garlic, minced
- 1 tbsp soy sauce or fish sauce
- 1 tbsp brown sugar
- 1 cup sliced mushrooms
- 1 red bell pepper, thinly sliced
- Juice of 1 lime
- Salt and pepper, to taste
- Optional garnish: chopped cilantro, green onions

- Place chicken breasts in the bottom of a 6-quart crockpot.
- Add coconut milk, chicken broth, red curry paste, ginger, garlic, soy sauce, and brown sugar.
- Stir gently to combine.
- Add mushrooms and sliced bell pepper.
- Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
- Remove chicken, shred with two forks, and return it to the soup.
- Stir in lime juice and season with salt and pepper to taste.
- Serve warm, garnished with cilantro or green onions if desired.
Notes
For extra heat, add chili garlic sauce or red pepper flakes. This soup pairs well with jasmine rice or rice noodles and tastes even better the next day.
