- 2 lbs beef stew meat, cut into 1-inch cubes
- 4 medium carrots, peeled and sliced
- 3 medium potatoes, peeled and diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 bay leaves
- Salt and pepper, to taste
- 2 tbsp olive oil (for browning beef)
- Optional garnish: fresh parsley

- Heat olive oil in a skillet over medium-high heat. Brown beef cubes on all sides, then transfer to the crockpot.
- Add carrots, potatoes, onion, and garlic to the crockpot.
- In a small bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Pour over beef and vegetables.
- Add bay leaves, cover, and cook on LOW for 7–8 hours or HIGH for 4–5 hours until beef and vegetables are tender.
- Remove bay leaves before serving. Garnish with fresh parsley if desired.
Notes
For a thicker stew, mix 2 tbsp cornstarch with 2 tbsp water and stir into the stew during the last 30 minutes of cooking. Leftovers taste even better the next day!
