- Rest: Let sit covered for 5–10 minutes.
- Make tzatziki: Mix Greek yogurt, grated cucumber, dill, lemon juice, garlic, and a pinch of salt.
- Serve: Spoon tzatziki over baked chicken and rice. Add cherry tomatoes if desired.
Notes
For extra flavor, marinate the chicken in lemon, garlic, and yogurt for 1–2 hours before baking. Make sure to drain cucumber well to keep tzatziki thick and creamy.
