  • 1 avocado, diced

For the Lime Dressing

  • 1/3 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tbsp fresh orange juice
  • 1 tsp honey
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste

For Serving

  • Tortilla chips
  • Pita chips
  • Fresh vegetables

  1. Prepare the vegetables: Dice the tomatoes, bell peppers, onion, jalapeño, and avocado into small pieces.
  2. Make the dressing: In a small bowl, whisk together olive oil, lime juice, orange juice, honey, cumin, chili powder, garlic powder, salt, and pepper.
  3. Combine ingredients: Add black beans, corn, tomatoes, peppers, onion, jalapeño, cilantro, and avocado to a large mixing bowl.
  4. Toss everything together: Pour the lime dressing over the mixture and gently stir until evenly coated.
  5. Chill and serve: Refrigerate for at least 30 minutes before serving. Serve cold with tortilla chips or your favorite dippers.
