This easy crockpot cheesy chicken broccoli rice is a complete comfort meal made in one pot. Tender chicken, fluffy rice, broccoli, and plenty of melted cheese come together for a family-friendly slow cooker dinner.

- 2 boneless, skinless chicken breasts, diced
- 1 1/2 cups uncooked long-grain white rice
- 3 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 2 cups broccoli florets (fresh or frozen)
- 2 cups shredded cheddar cheese
- 1/2 cup milk
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper, to taste
- Optional: paprika or red pepper flakes

- Add diced chicken, rice, chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper to the crockpot.
- Stir well to combine.
- Cover and cook on LOW for 3–4 hours or until rice is tender and chicken is fully cooked.
- Stir in broccoli, milk, and shredded cheddar cheese.
- Cover and cook an additional 20–30 minutes until broccoli is tender and cheese is melted.
- Stir well and serve warm.
Notes
For best results, add the broccoli near the end to prevent overcooking. You can swap cheddar for Colby Jack or mozzarella. This dish thickens as it sits.
