  • 1/3 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 23 tbsp cold water
  • 1/4 tsp salt

For the Lemon Curd

  • 3/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, cubed
  • 1 tsp vanilla extract

Optional Garnishes

  • Whipped cream
  • Fresh berries
  • Powdered sugar
  • Lemon slices or zest curls
  • Fresh mint leaves

Instructions

Instructions

  1. Prepare the tart dough: Mix flour, powdered sugar, and salt. Cut in cold butter until crumbly. Add egg yolk and cold water, mixing until dough forms. Chill for 30 minutes.
  2. Bake the tart shells: Roll out dough and cut into circles. Press into greased mini tart pans. Bake at 350°F (175°C) for 15–18 minutes until golden. Cool completely.
  3. Make the lemon curd: Whisk lemon juice, zest, sugar, and eggs in a saucepan over medium-low heat. Stir constantly until thickened. Remove from heat and whisk in butter and vanilla until smooth.
  4. Fill the tartlets: Spoon cooled lemon curd into each tart shell, filling evenly.
  5. Chill and decorate: Refrigerate for at least 1 hour before serving. Top with whipped cream, berries, or powdered sugar if desired.

Notes

For the smoothest lemon curd, strain it through a fine mesh sieve before filling the tartlets. Tart shells can be baked ahead and stored in an airtight container. Add toppings just before serving for the freshest appearance.
